Gibson’s Organic Liqueurs

Something about the setting in a totally unspoilt Cotswold village with church, rectory, beautiful manor house and duck pond suggests that this is a perfect place to grow berries and fruit.

Some years ago, Miles Gibson saw an opportunity to make the best possible use of the soil and conditions around the family home in Westwell in Oxfordshire to grow raspberries and blackcurrants. What started as an interest to grow fruit organically grew into a passion to make something special from the dark rich berries and before long Miles had developed, tasted and launched Gibson’s Liqueurs.

All the luscious fruit in each distinctive bottle of liqueur is grown here. Volunteers from WWOOF (World Wide Opportunities on Organic Farms) get experience and help to harvest the crops each year. Juices are extracted, infused and mixed using a Gibson recipe over a period of time. The lovely syrupy liqueur is finally bottled, labelled and ready to be loaded into crates and delivered across the Cotswolds and further afield.

Although raspberries and blackcurrants are the main crop, swathes of elderflower, elderberry and sloe are used to create new liqueur flavours and even a sloe whisky.

Gorgeous as a tipple and tincture at any time of the year, the liqueurs are pretty good chilled, topped up with sparkling wine or Champagne, and drizzled over meringues, ice cream or a suitable pud. Be berry adventurous with your own bottle!

Recipe for Raspberry Mojito

Ingredients: Gibsons Rasberry Mojito

  • 1 ½ measures rum
  • 1 ½ measures Gibson’s Raspberry Organic Liqueur
  • ½ measure sugar syrup
  • soda water
  • juice of half lime
  • handful mint leaves
  • Ice

Muddle together some mint leaves, sugar syrup, and ice in a tall glass. Add the rum and Gibson’s Liqueur. Top up with soda water and add the lime juice.
